¤ Oatmeal Buttermilk Muffins ¤

This is a healthy way to start your day. This treat can also serve as a snack at any time of the day.



Ingredients

-1cup Rolled oats
-1cup Flour (plain)
-1cup Buttermilk
-1/2cup Butter
-1/2cup Sugar
-1 Egg
-1tsp Baking powder
-1/4tsp Bicarbonate of soda
-1/8tsp Salt
-1/4cup Raisins

MARY's Method

* Combine the oats and buttermilk in a bowl. Leave to soak for 1 hour

*Preheat the oven to 200 degree celsius.

* Cream the butter and sugar with an electric mixer, until light and fluffy. Beat in the egg.

* In another bowl, sift together the flour, baking powder, salt and bicarbobate of soda. Stir the dry ingredient into the butter mixture, alternating with the oat mixture. Fold in the raisins. (Do not overmix, we don't want tough and rubbery muffins)

* Fill greased muffin cups or paper cases two-thirds full.

* Bake until a skewer inserted in the centre comes out clean, 20-25 minutes. Cool on a wire rack.

¤ Oaty Coconut Cookies ¤

I simply love coconut incorporated recipes. This is not left out. This cookies have a great texture. Thank God for creating the coconut. I hope you love it too.



Ingredients

-2cups Cooking oats
-1cup Dessicated coconut (unsweetened)
-1cup Butter
-3/4cup Superfine sugar
-2 Eggs
-4tbsp Milk
-11/2tsp Vanilla extract
-1cup Flour (sifted)
-1/2tsp Bicarbonate of soda
-1/4tsp Salt
-1tsp Ground cinnamon

MARY's Method

*Preheat oven to 200 degree celsius.

*Spread the oat and coconut on a baking sheet and bake for 10 minutes.

* Cream the butter and sugar. Beat in the eggs, milk and vanilla. Fold in the dry ingredients and the baked oat-coconut mixture.

* Drop spoonfuls of mixture on to two greased baking sheets.

*Bake for 8-10 minutes. Cool on a wire rack.

¤ Corn Cups ¤

O my my! I love this. You should try it.



Ingredients

-1 Egg
-1/2cup Milk
-1tbsp Vegetable oil
-1 scant cup Cornmeal
-1/2cup Flour (all-purpose)
-2tsp Baking powder
-3tbsp Sugar

MARY's Method

*Preheat oven to 190 degree celsius

*Beat the egg in a small bowl. Stir in the milk and vegetable oil. Set mixture aside.

*Stir cornmeal, flour, baking powder and sugar in a mixing bowl. Pour in the egg mixture and stir with a wooden spoon to combine.

*Spoon the mixture into baking cups. Bake until a skewer inserted in the centre. Comes out clean, about 25-30 minutes.

*Serve warm. (Enjoyable when cool too).

Beef Curry Sauce

A little variation from the chicken curry sauce previously posted. . .

¤ Chicken Curry Sauce ¤

I can bet it with you that you will enjoy ditching your red stew for this at least once in a while. The flavour is spectacular. And the taste? Short of the right adjective. I'll leave you to be the judge.



Ingredients

* 2 cups diced boneless Chicken 
* 1 generous cup Coconut Milk
* 2 Seasoning Cubes
* 2/3 cup Sweet potatoes (boiled and diced)
*2 tbs Vegetable oil
* 2tbs Butter
* 1/2-1 cup sliced carrots
* 1/2 cup chopped ugwu leaves
*1/2 cup chopped onions
* 2-3tbs curry (depending on the brand you use)
* Salt to taste

MARY's Method

- Put the vegetable oil in a pan and pour in the onions and chicken. Cook lightly, tossing around in the pan constantly, till the chicken is golden brown.

- Melt the butter in a saucepan. Add the curry and mix properly. Pour the coconut milk into the saucepan. Add the sauteed chicken mix and potatoes. Add the seasoning ingredient. Cook for about 25 minutes and add in the vegetables. Add salt to taste. Allow to cook for another 5 minutes.  (Hope you can wait for the sauce to get ready before eating, the aroma is tempting)



- Serve with white rice (see me with your cheque for my rice recipe. Lol).

¤ Pankara ¤

Nothing stops you from eating your akara even if you don't like oily foods. You can try out this method. Hope you like it.



Ingredients
- 2 cups Black eyed cowpea
- 3 Red bell peppers
- 1 Scotch bonnet
- 2 Large onions
- 1/2 cup chopped Ugwu leaves (optional)
- 2 Eggs
- Seasoning
- Salt
- Vegetable oil

MARY's Method
* Peel the beans. Blend with the vegetables, peppers and 1 onion. Make sure not to add too much water while blending; just enough to keep the grinder/blender running.

* Beat in the egg into the bean paste. Chop the other onion finely and pour into the paste. Add the seasoning and salt to taste. Stir continuously for 7-10minutes.

* Heat up your frying pan. Put about 2-3 tablespoons of oil in the pan and pour in about 2 cooking spoons of the bean paste into the pan. Allow to cook on low heat for about 3 minutes. Turn over to the other side and allow to cook for another 2 minutes until both sides are golden brown in colour.

¤ Baby's Potato Porridge ¤

Something for your little one. . .



Ingredients
- 1/2 cup diced sweet potato (yellow flesh)
-1/3 cup diced irish potato
- 1/4 Flaked sardine
-2 tsp Ground crayfish
-1 tsp Butter
-1tsp Vegetable oil
-Salt (to taste)

MARY's Method

* Boil the potatoes till soft in about 3/4 cup water. Add in the sardine (I prefer to use sardine because of the soft bone for calcium) and allow to simmer for about 3 minutes.

* Blend the potato and sardine. (I prefer to blend because of the fibre in sweet potato).

* Pour the  paste into a saucepan. Add the crayfish and butter. Add salt to taste ( a pinch might be enough if using salted butter). Allow to simmer for about 4 minutes.

* Serve warm.

¤ Homemade Pizza ¤



Let's see one dish I enjoy making . . . And of course, eating. It's flexible. You don't have to get scared by the long list of ingredients because you may not put all per time. And you can get creative with the toppings. Just be careful not to overload your pizza.

And no need to fear failing to get a perfect pizza on your first or few tries. You can check my former posts for my own slip. . .

INGREDIENTS

»Pizza Dough: Makes enough dough for two 10-12
inch pizzas

-1 1/2 cups warm water
-1 package (2 1/4 teaspoons) of active dry yeast
-3 1/2 cups bread flour
-2 Tbsp olive oil
-1 teaspoons salt
-1 teaspoon sugar

»Pizza Ingredients
-Olive oil
-Cornmeal (to help slide the pizza onto the baking sheet or pizza stone)
-Tomato sauce (I use ketchup)
-Cheese
-Gizzard (thinly sliced)
-Hot dogs (cut into thin strips)
-Grilled chicken (cut into strips
-Mushrooms (thinly sliced)
-Bell peppers (stems and seeds removed, thinly
sliced)
-Vegetables
-Onions (thinly sliced)
-Chilly pepper

»MARY's Method

* Place the warm water in the large bowl of a heavy duty stand mixer. Sprinkle the yeast over the warm water and let it sit for 5 minutes until the yeast is dissolved. After 5 minutes stir if the yeast hasn't dissolved completely. The yeast should begin to foam, which indicates that it is still active and alive.

*Using the mixing paddle attachment, mix in the flour, salt, sugar, and olive oil on low speed for a minute. Then replace the mixing paddle with the dough hook attachment.
Knead the pizza dough on low to medium speed using the dough hook until the dough is smooth and elastic, about 10 minutes.
If you don't have a mixer, you can mix the ingredients together and knead them by hand.
If the dough seems a little too wet, sprinkle it with a little more flour.

*  Spread a thin layer of olive oil over the inside of 2  bowls. Divide the dough into two. Place the pizza dough in the bowls and turn it around so that it gets coated with the oil. Cover the dough with plastic wrap and let sit in a warm place (75-85°F) until it doubles in size, at least 1 to 1 1/2 hours. You can let it sit for several hours if you want. The longer rise will improve the flavour of the pizza crust. If you don't have a warm spot in the house you can heat the oven to 150 degrees, and then turn off the oven. Let the oven cool till it is just a little warm, then place the bowl of dough in this warmed oven to rise.



PREPARING THE PIZZAS
* Preheat the oven to 450°F for at least 30 minutes.

* Remove the plastic cover from the dough and punch the dough down so it deflates a bit. Place
each in its own bowl, cover with plastic and let sit for 10 minutes.

* Prepare your desired toppings.



* Working one ball of dough at a time, take one ball of dough and flatten it with your hands on a slightly floured work surface. Starting at the center and working outwards, use your fingertips to press the dough to 1/2-inch thick. Turn and stretch the dough until it will not stretch further. Let the dough relax for 5 minutes and then continue to stretch it until it reaches the desired diameter - 10 to 12 inches. Use your palm to flatten the edge of the dough where it is thicker. You can pinch the very edges if you want to form a lip.

* Brush the top of the dough with olive oil (to prevent it from getting soggy from the toppings).

* Use your finger tips to press down and make dents along the surface of the dough to prevent bubbling.

* Let rest another 5 minutes. Repeat with the second ball of dough

* Lightly sprinkle your pizza peel (or flat baking sheet) with corn meal. Transfer one prepared
flattened dough to the pizza peel. If the dough has lost its shape in the transfer, lightly shape it to the desired dimensions.

* Spoon on the tomato sauce mixed with the chilly pepper, sprinkle with cheese, and place your desired toppings on the pizza.

* Sprinkle some cornmeal on the baking stone or sheet in the oven . Gently shake the peel to see if the dough will easily slide, if not, gently lift up the edges of the pizza and add a bit more cornmeal. Slide the pizza off of the peel and on to the baking stone or sheet in the oven. Bake pizza one at a time until the crust is browned and the cheese is golden, about 10-15 minutes. If you want, toward the
end of the cooking time you can sprinkle on a little more cheese.

¤ Meat Pie ¤



Ingredients

For the meat pie dough:
-500g Plain Flour (All Purpose Flour)
-1 tsp Baking Powder
-250g Salted Margarine
- 5 tbsp Cold Water

For the Meat Pie filling:
- 1 medium-sized Irish potatoes
- 2 medium-sized Carrots
- 250g Minced meat
- 1 small-sized Onion
- 1/8 cup finely chopped Vegetable leaf
- 2 tbsp Vegetable Oil
- 1 Knorr cubes
- 1/2 tsp Thyme
- 1/2 tsp Curry powder
- 1 tbsp Plain flour
- 1/2 cup Cold water
- Salt to taste

You will need
1 medium-sized egg (beaten) (for brushing your pie)

MARY's Method

» For the filling
* Peel the Irish potatoes and scrape the carrots, wash
and cut these two into tiny cubes.

* Wash and finely chop the onions.

*With your cooker set to medium heat, heat
the vegetable oil in a pot, add the diced onions and
stir for a bit, add the minced meat and stir vigorously till the minced meat turns pale.

*Add 1/2 cup of water, Knorr cubes and thyme. Cover
the pot and once the contents of the pot starts
boiling, add the diced potatoes and cook
till everything is well done. Add the carrot and allow to simmer for another 2 minutes.

Dissolve 1 tbsp of plain flour in a quater cup of cold water and add to the meat pie filling. (The flour paste keeps the meat pie filling
moist.)

* Add salt to taste, stir the contents and turn off the
heat. Set the meat pie filling aside.

Meat Pie dough
* Sift the flour and baking powder in a sizeable bowl. Add the and the salt and mix these dry ingredients very well.

* Rub the margarine into the flour with your finger tips to get a crumb-like mixture.

* Add the cold water in bits while at the same time folding the mix till a stiff ball of dough is formed.

* Knead the dough very well, put back in the bowl and
leave to rest for 5 to 7 minutes.

Cut, Fill, Fold and Close
*Preheat your oven to 180°C

*Rub margarine on the insides of the oven tray and set aside.

* Knead the dough some more, roll it out to achieve a
4-5mm thickness.

* Use a meat pie cutter to make round cuts on the rolled out dough. (You can use a small round pot cover with sharp edges)

* Imaginarily divide the round cut into half and scoop some meat pie filling unto one half of the round dough making sure to leave about 0.5 cm of the edge for closing the pie.

* Rub the egg on the inside edge of the cut meatpie
dough. 

* Fold the second half of the dough over the filling to meet the other end and
use a fork to press the 2 edges together to close
tightly.

* Place the pies in the oven tray.

* Brush the pies with the egg using a pastry brush. This gives the meat pie
a golden brown look when done.

* Set the tray in the preheated oven and bake for 30 to 40 minutes. Your meat pie is ready when it's golden brown.

Nigeria, Look to The Lord



Right from the time preceding the 2015 general elections, I've been wondering what's going on in the minds of the majority of the people in this nation. I read what many people write and I marvel. I hear some people's views about the 'change' they look forward to and all I can mutter is, "God have mercy!"

What am I driving at? The direction of the expression of the thoughts of people are alarming. The new president is seen as the saviour for many. They believe in him so much. They have labelled him a lot of things ranging from messiah to solution-provider. Some believe that the new party in government is the sure solution to Nigeria's problems. It's okay to hope for a better future. . .

But to forget the place of God in all of this is dreadful. God is a jealous God and He will never share His glory with anyone. I remember the case of King Herod who accepted the title "god". He was struck dead. It is God we should all look up to. He is the only one that can save this nation. He is the only one that can restore the past/lost glory of this land. He is the one that can sweep this nation clean. God is our only hope. We should take refuge in Him.

Don’t put your trust in mere humans.
They are as frail as breath.
What good are they? (Isaiah 2:22)

Let us with one heart lift our eyes to The Lord God Almighty. Let us trust Him alone to help us. Let us not misplace our priorities. God is our Saviour, not any man or political party. The arm of flesh will fail. Placing our trust in man will only yield disappointments. Our God never fails.

Way Forward: Those of us who are called by The Name of God should humble ourselves. Let us PRAY. Pray for Nigeria. Pray for God's mercy upon our land. Pray for our leaders- that they may fear God. Pray that God will wipe out every negativity from this nation. Each one of us should do our part- desist from wicked/evil acts. Let us seek justice/uprightness. Let us seek peace. Let your light shine in your little/big corner. Be the salt of the earth.

One thing is sure if we do this. . . God will heal our land. And great shall be our peace.
